New York: They survived 9/11. Now the workers and owners of Colors are looking forward to the challenge of satisfying picky New York diners.
73 employees of Windows of the World, including some Indians, died when the rooftop restaurant collapsed along with the World Trade Center's twin towers on 9/11.
Four years later, the surviving employees have come together to form a co-operative that owns and manages their new restaurant, Colors. Their venture is also a tribute to their absent colleagues.
Says Patricio Valencia, bartender, Colors: Yes, it's a place of memories. Many of my colleagues died in the tragedy."
Colors was developed with help from the Restaurant Opportunities Centre of New York, a non-profit organisation that aims to provide better working conditions to restaurant employees in the city.
According to Saru Jayaraman, Executive Director, Restaurant Opportunities Center of New York, the cooperative model for Colors was based on that of the Indian Coffee House chain.
Colors is truly an international restaurant. It has employees from 24 countries and that mix is reflected in its menu - with dishes from the Philippines, Thailand, Colombia, Bangladesh and Italy, among other nations.
