It isn’t tough to comprehend why you like a restaurant that opened just a few weeks back: sometimes you want to try what you haven’t eaten before, or you just want to experience something different. But what if you have the option to consider a place that has been there for years and continue to profoundly influence the manner in which you think about food? You wouldn’t want to miss the opportunity for making dining in Delhi a rewarding experience, right? Paatra at Jaypee Siddharth has everything that can delight, amaze and comfort you.
Since a few friends had also recommended Paatra, I was keen on knowing more about the food items that make it is a favorite among the food lovers.
As the name suggests Paatra is also liked for the exceptional paatras (utensils) that put forth distinctive cooking methods which further play a key role in preserving the exclusive flavor of the food served. To lay emphasis on the distinguishing and unique cooking methods, the restaurant menu gives a detailed description about ‘The Paatra family’ which includes – Handi, Pateeli/Deg, Kadhai, Tawa, Bhatti and Paatra.
So if ‘Bhatti Se’ category offers - Aatishi Murg, Patialashahi Seekh Makhmali Murg Malai Tikka, Bhune Chaat, Chatpate Tilwale Aloo; ‘Tawa Se’ section has interesting items like Mattarwali Tikki, Murg Banjara, Chapali Kebab, Chandni Tikki, Tawe de Soya Chaamp for guests to choose from.
The delectable Shadras Suziyan, Angara Gosht, Paneer ke Paanse, Achari Baingan come under ‘Kadhai Se’ section.
Those interested in ‘Handi Se’ category have food items like Nalli Roganjosh, Dhaba Murg, Paneer Kundan, Maah Ki Dal to opt for.
‘Deg Se’ is equally interesting with Saunfiana Subz Pulao, Mutton Khurma Pulao on offer. Rotis like Bharwan Amritsari Kulcha, Khasta Roti, Khameeri Roti are put under ‘Tandoor Se’ section.
But before I started trying the delectable food items, I was offered Pineapple Panna. This refreshing summer sip not only quenched my thirst but did just about everything to please my palate. Just in case you are bored of the regular mocktails, here’s an interesting alternative cocktails you should drink instead to stay both cool and refreshed.
What came next was something no North Indian can ever say no to. All those of you who are happy gorging on cheap and readily available street food definitely have a strong fondness for Aloo Tikki.
Even though it wasn’t the regular oh-so-oily, spicy versions that we have often had, Chandni Tikki (Rs 675) – which is the chef’s ode to the classic ‘Shammi Kebab’ – was impressive. Paatra’s Mattarwali Tikki (Rs 675) which come with an interesting filling of cottage cheese, dried fruits and nuts is equally delectable.
Those with a strong penchant for Soya, should definitely try Tawa de Soya Chaamp
(Rs 675). With a contemporary twist to the old dish, Tawa de Soya Chaamp has soya chops covered with onion, tomato masala and black pepper. Thankfully, it was easy to eat and not excessively spicy.
Shadras Sabziyan (Rs 675) turned out to be the best dish to exemplify present-day fusion fare. With several vegetables – broccoli, baby corn, mushrooms, ball peppers mixed together with the right amount of masala – it was both tasty and healthy.
Even though Hingwaale Chatpate Aloo (Rs 675) are a hit with the guests, I felt that it was a tad disappointing. Going by the name, one would expect the dish to be the spiciest of the lot.
If you happen to be one of those who prefer their meat red, Mutton Khurma Pulao
(Rs 795) is the dish to opt for. Popular at Punjabi Dhabas – Dhaba Murg (Rs 825) is expected to give you the feel of a highway eating joint with the comforts of a high-end restaurant.
With its interesting offer on royalty - the Royal Table – Paatra has managed to expand its fan base. When we asked Executive Chef Ashish Joshi, Jaypee Siddharth about the impact and significance of the Royal Table, he said, “‘Paatra’ is a restaurant serving cuisine from the undivided Punjab. The Royal table is our ode to the founder of the Sikh empire Maharaja Ranjit Singh or “Sher-e-Punjab” as was referred to. He waged many battles to make a strong Sikh empire stretching from Afghanistan to borders of the present day China. He was a secular ruler and had Muslims, Rajputs, Sikhs & European Generals in his Army.”
“For our discerning guests it is an opportunity to relive the Grandeur of Maharaja Ranjit Singh’s royal banquets through the specially crafted 4 course Royal meal. It is this cultural diversity which is reflected in the vivid flavors of delectable dishes which comprise the exclusive “Dawaat –e Khaas” menu of Royal Table. Some of the dishes carefully crafted by Master Chef in the menu are - Peshawari Bharwan Tangri, Machchli Khasa, Meve ke Seekh, Lahori Peeli Daal, Baluchi Surkh Gosht among others,” he added.
Available at Rs 2500 (exclusive of taxes) per head, guests have to book the Royal table 2 days in advance to ensure all ingredients are freshly sourced.
Mr. Prashant Mehta, F&B Manager, Jaypee Siddharth spelled out the factors that give Paatra an edge over its contemporaries. “Paatra is among rare species of Indian restaurants which still follows a traditional line in most of our dishes. Our master chefs are always working on creating innovative dishes and most unique creations are Aatishi Murg (whole chicken stuffed & marinated with secret spices, slow cooked in legendary traditional way on charcoal grill) and Seekh Patialashahi (a brilliant mélange of spices with this large rich seekh kebab extremely juicy and flavorsome),” he said.

Our Opinion: Besides food, the Royal Table continues to lure guests.
